This collection was selected for an Arizona Beer Week tasting and includes expert beer pairings from the Brewmaster & Chef at Four Peaks Brewing, Arizona’s largest craft brewer. It is the first time I’ve paired an Arizona cheese with some of my favorites from around the country and it definitely won’t be the last. I am so excited to see the emergence of local cheese in the state I’ve called home for almost four years!

Peppercorn Goat Cheese – Crow’s Leap Dairy, Buckeye, AZ
Rich and palate coating, this fresh goat cheese has that distinctive goat cheese tang with a light, fluffy texture and the zing of fresh cracked black peppercorns. Awesome combo for hot, summer days!
Pair with a light, hoppy IPA or a Sauvignon Blanc.
Beecher’s Flagship Reserve – Beecher’s Handmade Cheese, Seattle, WA
Over 12 months of careful aging in traditional cloth wrap bring this bold and balanced cheese to perfection. Nutty, tangy notes and a sweet finish happen when Cheddar and Gruyere cultures mingle in this crumbly, dense and satisfying cheese.
Pair with a nice, hoppy English style ale or a fruit forward Cab or Syrah.
Pleasant Ridge Reserve – Uplands Cheese, Dodgeville, WI
This savory and complex cheese is an American made cheese in the Alpine style. The dense, firm paste has a slight granularity and golden color which comes from the extra flavorful pasture grazed cows. Very seasonal, made only when cow’s are grazing.
Pair with a malty Amber Ale or Reisling.
Mt. Tam – Cowgirl Creamery, Point Reyes Station, CA
Fans of rich and decadent cheeses will swoon over this buttery triple cream with a smooth, spreadable paste and edible white rind. The ripening process is visible: the paste beneath the rind is smooth and spreadable surrounding a firm heart.
Pair with a rich Stout or Porter or a Sparkling wine.
